Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken thighs dry with paper towels.
- In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper to form a paste.
- Rub the spice mixture over each chicken thigh, tucking herbs under the skin if using.
- Place chicken thighs skin side up on a baking sheet and roast for 35-40 minutes until the internal temperature reaches 165°F (74°C).
