Description

Crispy, juicy roasted chicken thighs that are easy to make and full of flavor, perfect for any occasion.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh herbs like thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper to form a paste.
  4. Rub the spice mixture over each chicken thigh, tucking herbs under the skin if using.
  5. Place chicken thighs skin side up on a baking sheet and roast for 35-40 minutes until the internal temperature reaches 165°F (74°C).
  6. Let them rest for about five minutes before serving.

Notes

Use a meat thermometer for best results, and ensure the chicken skin is dry for maximum crispiness.
