Ingredients
- 3 tablespoons white miso paste
- 2 tablespoons brown sugar
- 2 teaspoons rice vinegar
- 2 tablespoons softened butter
- ¼ teaspoon red pepper flakes
- ¼ teaspoon ground ginger (or 1 teaspoon freshly grated)
- ¼ teaspoon black pepper
- 1 ½ lb boneless skinless chicken thighs
- Green onions, for serving (optional)
Instructions
- Preheat your oven to 425°F.
- Pat the chicken thighs dry with a paper towel to remove excess moisture.
- Trim any excess fat from the chicken thighs using kitchen scissors.
- In a small bowl, smash together the white miso paste, brown sugar, rice vinegar, softened butter, and spices.
- Spread the chicken thighs on the baking sheet in a single layer.
- Place a dollop of the miso mixture over each thigh, using your hands to evenly coat the chicken.
- Bake for 25 minutes or until the miso caramelizes and darkens.
- If necessary, spoon melted mixture back on the thighs during cooking to enhance flavor.
- Scrape any bits that stick to the pan with a spatula and brush them over the chicken for added flavor.
