Ingredients

  • 3 tablespoons white miso paste
  • 2 tablespoons brown sugar
  • 2 teaspoons rice vinegar
  • 2 tablespoons softened butter
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon ground ginger (or 1 teaspoon freshly grated)
  • ¼ teaspoon black pepper
  • 1 ½ lb boneless skinless chicken thighs
  • Green onions, for serving (optional)


Instructions

  1. Preheat your oven to 425°F.
  2. Pat the chicken thighs dry with a paper towel to remove excess moisture.
  3. Trim any excess fat from the chicken thighs using kitchen scissors.
  4. In a small bowl, smash together the white miso paste, brown sugar, rice vinegar, softened butter, and spices.
  5. Spread the chicken thighs on the baking sheet in a single layer.
  6. Place a dollop of the miso mixture over each thigh, using your hands to evenly coat the chicken.
  7. Bake for 25 minutes or until the miso caramelizes and darkens.
  8. If necessary, spoon melted mixture back on the thighs during cooking to enhance flavor.
