Description

A delightful roasted orange chicken bathed in a luscious orange glaze, perfect for any gathering.


Ingredients

  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth
  • 2 tablespoons butter (optional)


Instructions

  1. Preheat your oven to 425°F.
  2. Rinse the chicken under cold water and pat dry.
  3. Rub olive oil all over the chicken, followed by salt and pepper.
  4. Tuck the quartered onion inside the cavity.
  5. In a bowl, mix minced garlic, thyme, rosemary, orange zest, juice, honey, soy sauce, and Dijon mustard.
  6. Brush the glaze over the chicken, covering it generously.
  7. Place the chicken in a roasting pan and pour chicken broth around it.
  8. Roast for 1 hour and 15 minutes until the meat reaches an internal temperature of 165°F, basting every 30 minutes.
  9. If desired, melt butter and brush it over the chicken during the last 10 minutes.

Notes

Let the chicken rest for at least 10 minutes after roasting to redistribute the juices. Consider marinating the chicken for about an hour before cooking for enhanced flavor.
