A delightful roasted potato salad featuring crispy potatoes, fresh herbs, and a zesty dressing.
Ingredients
- 2 pounds potatoes (any variety)
- 1/4 cup olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1/2 cup pistachios, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh chives, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup red onion, finely chopped
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and chop the potatoes into bite-sized pieces.
- Toss the potatoes in olive oil, salt, and pepper.
- Spread them on a baking sheet and roast for about 25-30 minutes, or until golden and crispy, turning halfway through.
- While the potatoes are roasting, prepare the dressing by whisking together apple cider vinegar, Dijon mustard, honey, and additional olive oil if desired.
- In a large bowl, combine roasted potatoes, chopped pistachios, fresh herbs, and red onion.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve warm or at room temperature.
Notes
For extra flavor, try different types of potatoes or customize the herbs based on availability. A light sprinkle of salt just before serving can enhance the taste.
