Description

A delightful roasted potato salad featuring crispy potatoes, fresh herbs, and a zesty dressing.


Ingredients

  • 2 pounds potatoes (any variety)
  • 1/4 cup olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/2 cup pistachios, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the potatoes into bite-sized pieces.
  3. Toss the potatoes in olive oil, salt, and pepper.
  4. Spread them on a baking sheet and roast for about 25-30 minutes, or until golden and crispy, turning halfway through.
  5. While the potatoes are roasting, prepare the dressing by whisking together apple cider vinegar, Dijon mustard, honey, and additional olive oil if desired.
  6. In a large bowl, combine roasted potatoes, chopped pistachios, fresh herbs, and red onion.
  7. Drizzle the dressing over the salad and toss gently to combine.
  8. Serve warm or at room temperature.

Notes

For extra flavor, try different types of potatoes or customize the herbs based on availability. A light sprinkle of salt just before serving can enhance the taste.
