Description

Ingredients

  • 4 chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, sautéed
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Toothpicks or kitchen twine for securing


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the roasted red peppers, sautéed spinach, and mozzarella cheese.
  3. Season the chicken breasts with garlic powder, salt, and pepper.
  4. Cut a pocket in each chicken breast and stuff with the pepper, spinach, and mozzarella mixture.
  5. Secure the openings with toothpicks or kitchen twine.
  6. Heat olive oil in a skillet over medium-high heat. Brown the stuffed chicken breasts on both sides, about 4-5 minutes per side.
  7. Transfer the chicken to a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
