Ingredients
- 4 chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup fresh spinach, sautéed
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Toothpicks or kitchen twine for securing
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the roasted red peppers, sautéed spinach, and mozzarella cheese.
- Season the chicken breasts with garlic powder, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the pepper, spinach, and mozzarella mixture.
- Secure the openings with toothpicks or kitchen twine.
- Heat olive oil in a skillet over medium-high heat. Brown the stuffed chicken breasts on both sides, about 4-5 minutes per side.
- Transfer the chicken to a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
- Let rest for a few minutes before serving.
