A wholesome and colorful sheet pan dinner featuring chicken sausage and a variety of roasted vegetables.
Ingredients
- 1 lb chicken sausage
- 2 cups bell peppers, chopped
- 1 cup zucchini, sliced
- 1 cup red onion, chopped
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the chicken sausage, bell peppers, zucchini, red onion, and broccoli in a large bowl.
- Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper.
- Toss everything together until well coated.
- Spread the mixture evenly on a baking sheet.
- Roast in the oven for 25-30 minutes, or until the vegetables are tender and the sausage is heated through, stirring halfway.
- Serve warm and enjoy!
Notes
Use parchment paper on the baking sheet for easier cleanup. Feel free to experiment with seasonal vegetables.
