Instructions
- Preheat the oven to 425°F (220°C).
- Pat the whole chicken dry with paper towels.
- Rub olive oil all over the chicken, then season generously with salt, pepper, and garlic powder.
- Place the lemon halves and fresh herbs inside the cavity of the chicken.
- Place the chicken in a roasting pan and roast in the oven for about 75 minutes, or until the internal temperature reaches 165°F (74°C).
