Ingredients
- 4 boneless chicken breasts
- 1 cup feta cheese, crumbled
- 2 cups fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Toothpicks or kitchen twine for securing
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the feta cheese, chopped spinach, and sun-dried tomatoes.
- Place each chicken breast between two pieces of plastic wrap and pound them to an even thickness.
- Season the chicken with salt and pepper.
- Spoon the feta and spinach mixture onto each chicken breast and roll them up tightly. Secure with toothpicks or kitchen twine.
- Heat olive oil in an oven-safe skillet over medium heat.
- Sear the chicken rolls for about 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken is cooked through.
- Remove from the oven, let rest for a few minutes, then remove toothpicks or twine and slice to serve.
