Ingredients
- – 2 large chicken breasts, cut in half lengthwise (500 g)
- – Flour for dredging (120 g)
- – 1 tablespoon olive oil (15 ml)
- – 1 tablespoon vegetable oil (15 g)
- – 3 sprigs fresh rosemary
- – 1/2 cup apple juice (120 ml)
- – 3 cloves garlic, minced
- – 3 tablespoons (45 ml) honey mustard
- – 1 cup coconut cream (240 ml)
- – Salt & pepper to taste
Instructions
- Warm the olive oil and vegetable oil in a large pan over medium-high heat.
- Slice the chicken breasts lengthwise to create four thinner pieces. Coat each piece in flour.
- Cook the chicken for 5 minutes on each side, then take it out of the pan and put it aside.
- Strip the rosemary needles from the stems and toss them into the pan. Allow the rosemary to cook for about a minute.
- Pour in the apple juice, add the minced garlic and honey mustard. Stir the mixture until it forms a smooth sauce, then return the chicken and add the coconut cream to the pan.
- Continue cooking over medium-low heat for 8-10 minutes until the chicken is fully cooked and the sauce has thickened. Adjust the seasoning with salt and pepper to your liking.
