Ingredients

  • – 2 large chicken breasts, cut in half lengthwise (500 g)
  • – Flour for dredging (120 g)
  • – 1 tablespoon olive oil (15 ml)
  • – 1 tablespoon vegetable oil (15 g)
  • – 3 sprigs fresh rosemary
  • – 1/2 cup apple juice (120 ml)
  • – 3 cloves garlic, minced
  • – 3 tablespoons (45 ml) honey mustard
  • – 1 cup coconut cream (240 ml)
  • – Salt & pepper to taste


Instructions

  1. Warm the olive oil and vegetable oil in a large pan over medium-high heat.
  2. Slice the chicken breasts lengthwise to create four thinner pieces. Coat each piece in flour.
  3. Cook the chicken for 5 minutes on each side, then take it out of the pan and put it aside.
  4. Strip the rosemary needles from the stems and toss them into the pan. Allow the rosemary to cook for about a minute.
  5. Pour in the apple juice, add the minced garlic and honey mustard. Stir the mixture until it forms a smooth sauce, then return the chicken and add the coconut cream to the pan.
  6. Continue cooking over medium-low heat for 8-10 minutes until the chicken is fully cooked and the sauce has thickened. Adjust the seasoning with salt and pepper to your liking.
