Ingredients
- 2 cups rotisserie chicken, shredded
- 8 oz pasta (farfalle or your choice)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Boil the pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, bringing the mixture to a simmer. Add the cherry tomatoes and spinach, cooking until the spinach wilts.
- Stir in the shredded rotisserie chicken and Parmesan cheese, mixing until the cheese melts and creates a creamy sauce.
- Add the cooked pasta to the skillet, tossing to coat everything evenly. Season with salt and pepper to taste.
- Garnish with fresh basil and additional Parmesan cheese, if desired.
