Ingredients

  • 2 cups rotisserie chicken, shredded
  • 8 oz pasta (farfalle or your choice)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Boil the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the heavy cream and chicken broth, bringing the mixture to a simmer. Add the cherry tomatoes and spinach, cooking until the spinach wilts.
  4. Stir in the shredded rotisserie chicken and Parmesan cheese, mixing until the cheese melts and creates a creamy sauce.
  5. Add the cooked pasta to the skillet, tossing to coat everything evenly. Season with salt and pepper to taste.
