Description

A comforting casserole made with rotisserie chicken, fresh zucchini, and a creamy sauce, perfect for weeknight meals.


Ingredients

  • 1 small rotisserie chicken, pulled and shredded
  • 3 medium-sized zucchinis, diced
  • 1 (6oz) box of Stove Top chicken stuffing mix
  • 1/2 cup butter, melted
  • 1 (10oz) can of cream of chicken soup
  • 1/2 cup sour cream


Instructions

  1. Preheat your oven to 350° F and grease a 9×13 baking dish.
  2. Melt the butter in a large bowl.
  3. Mix the melted butter with the box of dry stuffing mix. Set aside half for topping.
  4. Add the pulled chicken, diced zucchini, cream of chicken soup, and sour cream to the bowl.
  5. Mix everything well until creamy.
  6. Spread the mixture into the greased baking dish.
  7. Evenly sprinkle the top with the reserved stuffing mixture.
  8. Bake uncovered for 35-45 minutes until warmed through and golden brown.
  9. Let cool slightly before serving.

Notes

Consider using seasoned rotisserie chicken for added flavor. You can swap zucchini for other vegetables like bell peppers or carrots.
