A comforting casserole made with rotisserie chicken, fresh zucchini, and a creamy sauce, perfect for weeknight meals.
Ingredients
- 1 small rotisserie chicken, pulled and shredded
- 3 medium-sized zucchinis, diced
- 1 (6oz) box of Stove Top chicken stuffing mix
- 1/2 cup butter, melted
- 1 (10oz) can of cream of chicken soup
- 1/2 cup sour cream
Instructions
- Preheat your oven to 350° F and grease a 9×13 baking dish.
- Melt the butter in a large bowl.
- Mix the melted butter with the box of dry stuffing mix. Set aside half for topping.
- Add the pulled chicken, diced zucchini, cream of chicken soup, and sour cream to the bowl.
- Mix everything well until creamy.
- Spread the mixture into the greased baking dish.
- Evenly sprinkle the top with the reserved stuffing mixture.
- Bake uncovered for 35-45 minutes until warmed through and golden brown.
- Let cool slightly before serving.
Notes
Consider using seasoned rotisserie chicken for added flavor. You can swap zucchini for other vegetables like bell peppers or carrots.
