Ingredients
- – 1/4 cup (60 ml) mayonnaise
- – 1/2 cup (120 ml) plain Greek yogurt
- – 1 tablespoon (15 ml) fresh lemon juice
- – 1 clove garlic, chopped
- – 1 tablespoon (15 ml) freshly chopped parsley, plus more for garnish
- – 16 ounces (450 g) cooked beef or 1 14.75-ounce (420 g) can canned salmon
- – 2 large eggs, lightly beaten
- – 1/2 cup (120 ml) chopped onion
- – 2/3 cup (160 ml) fine almond flour
- – 1/4 cup (60 ml) chopped fresh parsley
- – 2 cloves garlic, chopped
- – 2 tablespoons (30 ml) fresh lemon juice
- – 1/8 teaspoon (1 ml) sea salt, more or less to taste
- – 1/8 teaspoon (1 ml) freshly cracked black pepper, more or less to taste
- – vegetable oil, approximately 2-4 tablespoons (30-60 ml) as needed
- – chopped fresh parsley
- – lemon wedges
Instructions
- In a small bowl, combine the mayonnaise, Greek yogurt, lemon juice, garlic, and parsley.
- Mix these ingredients together until they are well blended. Cover the bowl and place it in the refrigerator until needed.
- In a medium bowl, break apart the cooked beef with a fork.
- Add the eggs, onion, almond flour, parsley, garlic, lemon juice, salt, and pepper to the bowl with the beef.
- Mix everything thoroughly until the mixture is uniform.
- Using a scoop, portion out 2-ounce amounts of the beef mixture.
- Roll each portion into a ball with your hands, then flatten it into a patty.
- Lay each patty on parchment paper and continue until all the mixture is used up.
- Heat a large skillet over medium heat.
- Add a tablespoon of oil to the pan and swirl it around to coat the surface evenly. Heat the oil until it is shimmering.
- Carefully place the patties in the skillet in a single layer, avoiding overcrowding. Cook in batches if necessary.
- Cook the patties for 5 to 6 minutes, or until the bottom is golden brown, then turn them over.
- Continue cooking for another 5 minutes, ensuring both sides are golden brown without overcooking.
- Transfer the cooked patties to a plate lined with paper towels. Repeat the process with the remaining patties, adding more oil as needed.
- Once all patties are cooked, place them on serving plates.
- Drizzle the prepared lemon-garlic sauce over the patties.
- Decorate with fresh parsley and lemon wedges, then serve immediately.
