Ingredients
- 4 Chicken breasts
- 1 cup Mexican blend cheese
- 1 can Corn
- 1 can Black beans
- 2 tablespoons Olive oil
- 2 tablespoons Taco seasoning
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil over medium heat in a skillet.
- Season the chicken breasts with taco seasoning, salt, and pepper.
- Cook the chicken in the skillet until browned, approximately 4-5 minutes per side.
- Remove the chicken from the skillet and place it in a baking dish.
- In the same skillet, combine corn and black beans. Spoon this mixture over the chicken.
- Generously sprinkle Mexican blend cheese on top of the chicken.
- Bake in the preheated oven for 20-25 minutes, or until the chicken cooks through and the cheese melts.
- Serve warm and enjoy.
