Description

A flavorful one-pan dish featuring juicy chicken breasts topped with black beans, corn, and Mexican blend cheese, perfect for busy weeknights.


Ingredients

  • 4 Chicken breasts
  • 1 cup Mexican blend cheese
  • 1 can Corn
  • 1 can Black beans
  • 2 tablespoons Olive oil
  • 2 tablespoons Taco seasoning
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil over medium heat in a skillet.
  3. Season the chicken breasts with taco seasoning, salt, and pepper.
  4. Cook the chicken in the skillet until browned, approximately 4-5 minutes per side.
  5. Remove the chicken from the skillet and place it in a baking dish.
  6. In the same skillet, combine corn and black beans. Spoon this mixture over the chicken.
  7. Generously sprinkle Mexican blend cheese on top of the chicken.
  8. Bake in the preheated oven for 20-25 minutes, or until the chicken cooks through and the cheese melts.
  9. Serve warm and enjoy.
