Ingredients
- 4 chicken breasts
- 1 cup Mexican blend cheese
- 1 cup corn
- 1 cup black beans or pinto beans
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: Chopped cilantro and lime for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a pan, heat olive oil over medium heat and sear the chicken breasts until golden brown on both sides.
- Season the chicken with cumin, paprika, salt, and pepper.
- In a baking dish, layer the seared chicken, corn, beans, and top with Mexican blend cheese.
- Cover the dish with foil and bake for about 25-30 minutes until the chicken is cooked through.
- Remove the foil and bake for an additional 5-10 minutes to melt the cheese.
- Garnish with chopped cilantro and lime if desired before serving.
Notes
For extra flavor, marinate the chicken in seasoning for 30 minutes before cooking and use a meat thermometer to ensure chicken is cooked to 165°F (75°C).
