Description

A flavorful dish featuring tender chicken breasts topped with melty Mexican blend cheese, sweet corn, and hearty beans.


Ingredients

  • 4 chicken breasts
  • 1 cup Mexican blend cheese
  • 1 cup corn
  • 1 cup black beans or pinto beans
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: Chopped cilantro and lime for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pan, heat olive oil over medium heat and sear the chicken breasts until golden brown on both sides.
  3. Season the chicken with cumin, paprika, salt, and pepper.
  4. In a baking dish, layer the seared chicken, corn, beans, and top with Mexican blend cheese.
  5. Cover the dish with foil and bake for about 25-30 minutes until the chicken is cooked through.
  6. Remove the foil and bake for an additional 5-10 minutes to melt the cheese.
  7. Garnish with chopped cilantro and lime if desired before serving.

Notes

For extra flavor, marinate the chicken in seasoning for 30 minutes before cooking and use a meat thermometer to ensure chicken is cooked to 165°F (75°C).
