Description

A hearty sausage and spinach soup that’s easy to prepare and perfect for any occasion.


Ingredients

  • 1 pound Italian sausage
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup diced tomatoes
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Pour in the chicken broth and diced tomatoes, and bring to a boil.
  4. Stir in the fresh spinach and Italian seasoning, and cook for an additional 5 minutes.
  5. Season with salt and pepper to taste before serving.

Notes

For a creamier texture, consider adding a splash of heavy cream before serving. Adjust seasoning to taste and feel free to add crushed red pepper flakes for extra flavor.
