Ingredients
- – 4 russet potatoes, peeled and sliced into 1/4-inch (6mm) slices (about 900g)
- – 1 yellow onion, sliced into rings
- – 3 tablespoons (45 ml) vegetable oil
- – 3 tablespoons (45 ml) all-purpose flour
- – 1/2 teaspoon (3 ml) sea salt
- – 475ml whole milk, room temperature
- – 1 1/2 cups (360 ml) cheddar cheese, shredded
- – salt and pepper to taste
Instructions
- Set your oven to 400°F and prepare an 8×8-inch baking dish by lightly coating it with a nonstick spray.
- In the dish, layer the potato slices and onion rings, alternating between the two.
- In a medium saucepan, heat vegetable oil over medium heat. Add the flour and sea salt, stirring continuously with a whisk for about a minute.
- Gradually incorporate the milk into the mixture. Continue cooking until the sauce thickens.
- Add the shredded cheddar cheese all at once, stirring until it melts and becomes smooth, which should take around 30-60 seconds.
- Distribute the cheese sauce evenly over the layered potatoes, then cover the dish with aluminum foil.
- Place the dish in the oven and let it bake for 85-90 minutes, or until the potatoes are soft.
- For a golden, crispy top, switch the oven setting to broil once baking is complete, and broil until the top is browned.
- Add salt and pepper according to your preference and serve.
Notes
- For a more intense flavor, consider using sharp cheddar cheese instead of mild.
- Enhance the cheese sauce by experimenting with a touch of nutmeg or paprika.
- To ensure even cooking, layer the potatoes and onions evenly and gradually mix in the milk while stirring to avoid lumps.
