Ingredients
- 1 1/2 lb (680 g) s of fresh broccoli (about 3 medium-small crowns) cut into florets
- 1 tablespoon (15 ml) 3 cloves of garlic, minced fine
- 11 oz (312 g) of chicken sausage or 4 links of your favorite beef sausage, precooked
- 16 oz (454 g) package of froz en cheese tortellini
- 8 oz (227 g) of grated parmesan cheese–not the stuff from the can!
- 1/4 teaspoon (1 ml) of red chili flakes optional
- 6 tablespoon (90 ml) s of olive oil
- Salt and pepper to taste
Instructions
- Set your oven to 400º to begin heating.
- Combine the broccoli pieces and minced garlic on a baking sheet with 2 tablespoons of olive oil. Add a pinch of salt and pepper.
- Bake for 10 minutes at 400º until the broccoli turns a bright green but remains firm.
- While it’s baking, slice the sausage into thin rounds and place them in a large mixing bowl.
- After 10 minutes, take the broccoli out of the oven and increase the temperature to 450º.
- Carefully transfer the warm broccoli and garlic to the bowl with the sausage.
- Incorporate the frozen tortellini, optional red chili flakes, and 3 tablespoons of olive oil into the bowl.
- Set aside 1/2 cup of parmesan cheese. Add the rest to the bowl with the tortellini, broccoli, and sausage.
- Mix everything gently, ensuring the ingredients are well-coated with cheese and oil.
- Drizzle 1 tablespoon of olive oil onto the same baking sheet used for the broccoli and spread it evenly to prevent sticking.
- Transfer the mixture of parmesan, broccoli, sausage, and tortellini onto the prepared baking sheet.
- Bake at 450º for 12-15 minutes until the cheese is bubbly and golden, and the sausage and tortellini edges are crisp.
- Take it out of the oven and sprinkle the reserved 1/2 cup of parmesan on top.
- Garnish with fresh basil and a dash of crushed red pepper flakes before serving.
