Ingredients
- 4 chicken breasts
- 3 tablespoons garlic butter
- 4 medium potatoes, diced
- 2 cups mixed vegetables (bell peppers, zucchini, broccoli)
- Salt and pepper to taste
- Fresh herbs (like thyme or parsley) for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the diced potatoes and mixed vegetables. Pour the melted garlic butter over the mixture, then season with salt and pepper. Toss everything together until well-coated.
- Spread the chicken breasts on a sheet pan. Season them with salt and pepper.
- Arrange the potato and vegetable mixture around the chicken on the sheet pan.
- Place the sheet pan in the preheated oven and bake for 25-30 minutes. Check for doneness.
- Once finished, remove the pan from the oven and garnish with fresh herbs before serving.
