Ingredients

  • 4 chicken breasts
  • 3 tablespoons garlic butter
  • 4 medium potatoes, diced
  • 2 cups mixed vegetables (bell peppers, zucchini, broccoli)
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced potatoes and mixed vegetables. Pour the melted garlic butter over the mixture, then season with salt and pepper. Toss everything together until well-coated.
  3. Spread the chicken breasts on a sheet pan. Season them with salt and pepper.
