Ingredients
- 1 ½ pounds (680 g) boneless skinless chicken thighs
- 3 medium zucchini, sliced into 1/4-inch rounds
- 1 pint (473 ml) cherry tomatoes, halved
- 1 medium red onion, thinly sliced
- 4 garlic cloves, minced
- 1/3 cup (80 ml) black olives, pitted and halved
- 4 oz (113 g) dairy-free cheese, crumbled
- 2 tablespoons (30 ml) olive oil
- 2 tablespoons (30 ml) freshly squeezed lemon juice
- 1 tablespoon (15 ml) dried oregano
- 1 teaspoon (5 ml) dried thyme
- 1 teaspoon (5 ml) paprika
- Salt and freshly ground black pepper, to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Begin by setting your oven to a temperature of 400°F (200°C). Use paper towels to dry the chicken thighs thoroughly, which will aid in browning during cooking. Generously coat both sides of the chicken with salt and pepper, then set them aside.
- In a large bowl, combine the zucchini slices, halved cherry tomatoes, red onion slices, minced garlic, and black olives. Pour olive oil and lemon juice over the mixture. Add oregano, thyme, paprika, along with some more salt and pepper. Stir until the vegetables are well-coated.
- In a 9×13-inch baking dish, lay down half of the vegetable mixture as a base. Arrange the seasoned chicken thighs on top. Scatter the remaining vegetables over and around the chicken.
- Place the baking dish in the oven and cook, uncovered, for 25 minutes. Take it out and evenly distribute the crumbled dairy-free cheese on top. Put the dish back in the oven for another 10 minutes, or until the chicken’s internal temperature reaches 165°F (74°C) and the cheese starts to brown slightly.
- Once done, remove the dish from the oven and let it sit for 5 minutes before serving. Optionally, add fresh basil leaves as a garnish and enjoy the meal warm.
