Ingredients
- 1 1/2 lb (680 g) chicken breast (about 3-4 pieces), approx. 1 inch thick
- 2 T olive oil
- 2 garlic cloves, minced
- 1/3 c grated parmesan
- 1/3 c breadcrumbs, Italian or plain–can add 1 tsp (5 ml) Italian seasoning to plan breadcrumbs!
- 1/2 tsp (3 ml) cracked pepper
- 1/2 – 3/4 tsp (4 ml) sea salt
- 2 lb (907 g) red potatoes, cut into bite sized pieces , (if small quartered, large r potatoes will be cut into 6 ths or 8 ths even)
- 1 – 2 garlic clove, minced
- 2 T olive oil
- 2 T grated parmesan
- Salt and pepper to taste
- 1 lb (454 g) fresh green beans, ends trimmed
- 1 T olive oil
- 1 garlic clove, minced
- 1 T parmesan (optional )

Instructions
- Set your oven to 425°F to preheat.
- Cover a baking sheet with parchment paper for easier cleanup or lightly coat with cooking spray. In a medium-sized bowl, combine all the ingredients for the potatoes and mix thoroughly to coat them evenly. Arrange the potatoes over one-third of the baking sheet and bake in the oven for around 10-15 minutes. For those who prefer their potatoes more browned, opt for the additional five minutes.
- As the potatoes are roasting, use the same bowl to combine all the chicken ingredients, ensuring the chicken is well coated. Take the baking sheet out of the oven and add the chicken next to the potatoes. Return it to the oven while you prepare the green beans by mixing them with their ingredients, then add them to the sheet.
- Allow everything to bake for roughly 25 minutes or until the chicken’s internal temperature hits 165°F. If you want the potatoes to have an extra crisp, switch the oven to broil on high and cook for another 4-5 minutes.
- Take the pan out of the oven and let it cool for a few minutes before serving. Enjoy your meal!
