Ingredients

  • – 1 1/2 lb (680 g) chicken breast (about 3-4 pieces), approx. 1 inch thick
  • – 2 T (30 ml) olive oil
  • – 2 garlic cloves, minced
  • – 1/3 c (80 g) grated cheese
  • – 1/3 c (40 g) breadcrumbs, Italian or plain – can add 1 tsp Italian seasoning to plain breadcrumbs!
  • – 1/2 tsp (3 ml) cracked pepper
  • – 1/2 – 3/4 tsp (4 ml) sea salt
  • – 2 lb (900 g) beef sausages, cut into bite sized pieces (if small quartered, larger sausages will be cut into 6ths or 8ths even)
  • – 1 – 2 garlic clove, minced
  • – 2 T (30 ml) olive oil
  • – 2 T (20 g) grated cheese
  • – salt and pepper to taste
  • – 1 lb (450 g) fresh green beans, ends trimmed
  • – 1 T (15 ml) olive oil
  • – 1 garlic clove, minced
  • – 1 T (10 g) cheese (optional)
  • – salt and pepper to taste


Instructions

  1. Heat your oven to 425°F.
  2. Prepare a sheet pan with parchment for easy cleaning or apply cooking spray. In a medium bowl, combine all the ingredients for the beef sausages, ensuring they’re well-coated. Spread the sausages on one-third of the pan and bake for 10-15 minutes. If you prefer them more browned, leave them in for the additional five minutes.
  3. As the sausages are in the oven, mix all the ingredients for the chicken in the same bowl, ensuring the chicken is thoroughly covered. Take out the pan with the sausages and place the chicken pieces alongside. Return the pan to the oven.
  4. While the chicken and sausages are baking, combine all the ingredients for the green beans, then add them to the sheet pan.
  5. Cook everything for approximately 25 minutes, or until the chicken’s internal temperature hits 165°F. For crispier sausages, switch the oven to high broil for an extra 4-5 minutes if you like.
  6. Take the pan out of the oven and let it cool for several minutes prior to serving. Enjoy your meal!
