Ingredients

  • 1 lb (454 g). large shrimp, (peeled and deveined)
  • Kosher salt and fresh cracked black pepper, (to taste)
  • 1 teaspoon (5 ml) Cajun seasoning, (or Creole seasoning)
  • 1/2 teaspoon (3 ml) dried Oregano
  • 2 tablespoon (30 ml) s Olive oil
  • 6 oz (170 g) beef sausage, (thinly sliced)
  • 10 ounce (283 g) s fettuccine pasta
  • 1/2 yellow onion, (thinly sliced)
  • 1 red bell pepper, (thinly sliced)
  • 4 teaspoon (20 ml) s Cajun seasoning, (or Creole seasoning)
  • 1 teaspoon (5 ml) brown sugar
  • 2-3 cloves garlic, (chopped)
  • 1/2 cup (120 ml) crushed tomatoes
  • 1 cup (240 ml) chicken broth, sodium free
  • 1 cup (240 ml) heavy cream
  • 2/3 cup (160 ml) Grated Parmesan
  • 1 tablespoon (15 ml) parsley, (chopped)


Instructions

  1. Coat the shrimp with a blend of salt, pepper, Cajun seasoning, and oregano until well-covered. Warm up a large pan over medium-high heat, adding a splash of olive oil to coat the bottom.
  2. Place the shrimp in the pan and let them cook for about 2 minutes. Turn them over and continue cooking for another 1-2 minutes, then transfer them to a plate and keep them aside. Add a bit more olive oil to the pan and cook the sausage slices until they are browned and caramelized, roughly 4 to 5 minutes. Remove them and set them aside as well. This pan will be used to prepare the sauce.
  3. Boil the pasta in salted water until it is just tender. Drain the pasta but do not rinse it. Put it aside.
  4. With the same pan now empty, reduce the heat to medium and add a bit more olive oil. Toss in the onion, red bell pepper, Cajun seasoning, brown sugar, and a pinch of salt. Sauté until the onion and pepper are slightly softened, scraping up any browned bits from the pan as you go. Add the garlic and cook until it becomes aromatic, around 30 seconds.
  5. Pour in the crushed tomatoes, chicken broth, and heavy cream. Allow the mixture to come to a simmer, stirring and scraping up any remaining browned bits from the bottom of the pan, and let it simmer for a few minutes.
  6. Once simmering, incorporate the Parmesan, stirring it into the sauce. When the cheese is melted and blended, add the pasta and sausage back into the pan, stirring to mix and heat everything through for 2 to 3 minutes. Adjust the seasoning with salt and pepper, then finally add the shrimp to prevent them from overcooking in the sauce.
  7. Garnish with chopped parsley before serving.
