Ingredients
- 1 tablespoon vegetable oil (15 ml)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon (15 ml) fresh ginger, grated
- 1 pound (454 g) boneless, skinless chicken breast, sliced (about 450 grams)
- 4 cups chicken broth (950 ml)
- 1 can coconut milk (400 ml)
- 2 tablespoons (30 ml) soy sauce
- 1 tablespoon (15 ml) lemon juice
- 1 teaspoon (5 ml) honey
- 1 cup (240 ml) mushrooms, sliced (100 grams)
- 1 red bell pepper, sliced
- 1 cup (240 ml) snow peas (100 grams)
- 1/4 cup (60 ml) fresh parsley, chopped (15 grams)
- 2 green onions, sliced
- Salt and pepper to taste
- 1 fresh lemon, cut into wedges
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and grated ginger, cooking for 1 minute.
- Add the sliced chicken breast to the pot and cook until no longer pink.
- Pour in the chicken broth and bring to a simmer.
- Stir in the coconut milk, fish sauce, lime juice, and sugar.
- Add the sliced mushrooms, red bell pepper, and snow peas to the pot.
- Simmer the soup for 10-15 minutes, until vegetables are tender.
- Season with salt and pepper to taste.
- Remove from heat and stir in the chopped cilantro and sliced green onions.
- Serve hot with lime wedges on the side.
