Warm and satisfying steak burritos with marinated steak, cilantro lime rice, and delicious toppings for a delightful meal.
Ingredients
- 1 pound of strip steak (sliced)
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 clove of garlic (minced)
- 1 tablespoon of lime juice
- 1/2 teaspoon of cumin
- 1 tablespoon of soy sauce
- 1 tablespoon of olive oil
- 1 cup of cooked cilantro lime rice
- 1/2 cup of guacamole
- 1/2 cup of pico de gallo
- 1/2 cup of shredded cheddar cheese
- 4 flour tortillas (8-inch)
- Fresh jalapeños or bell peppers (sliced)
- Fresh cilantro or green onions (chopped)
- Chipotle mayo
- Nonstick cooking spray
Instructions
- Create the marinade by mixing the salt, pepper, garlic, lime juice, cumin, and soy sauce in a bowl.
- Toss the steak pieces into the bowl, making sure every piece is coated well with the marinade. Allow the beef to marinate for at least 30 minutes.
- Pat the steak pieces dry. Heat a skillet over medium-high heat, then cook the steak cuts for about 5 minutes, or until you reach your preferred doneness.
- Set the beef cuts aside and warm each tortilla for about half a minute.
- Assemble the burritos by laying out the warm tortillas flat. Add the rice, steak, guacamole, pico de gallo, and cheddar cheese to each one.
- Top each tortilla with fresh bell peppers or jalapeños, and drizzle some Chipotle mayo to taste.
- Roll each burrito snugly. Spray each burrito with nonstick spray, then place them seam-side down in a hot skillet.
- Cook each burrito for about a minute, or until the grilled side crisps up. Flip and cook the other side until golden brown.
Notes
For extra flavor, consider adding a touch more lime juice to the rice or incorporating black beans into the filling. Customize with different toppings.
