Description
A warm and comforting slow cooker butter chicken that combines tender chicken thighs with aromatic spices and a rich coconut sauce.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 cup finely chopped onion
- 4 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) crushed tomatoes
- 1 cup coconut milk
- 3 tablespoons butter
- 2 tablespoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Add the chicken thighs to your slow cooker, followed by the chopped onion, garlic, and grated ginger.
- Stir in the crushed tomatoes, coconut milk, butter, and all the spices: garam masala, turmeric, cumin, paprika, and salt to taste.
- Cover and cook on low for 6-8 hours or on high for 4 hours until the chicken becomes tender.
- Once cooked, shred the chicken using two forks and stir everything well to combine.
- Serve hot, beautifully garnished with fresh cilantro, and alongside rice or naan for a complete meal.
Notes
For a richer flavor, sauté the onions, garlic, and ginger in butter before adding them to the slow cooker. You can also add vegetables such as spinach or bell peppers for added nutrition.
