Ingredients
- 4 chicken breasts
- 1 cup salsa
- 2 cups rice (prepared according to package instructions)
- 2 avocados (diced)
- 1/4 cup fresh cilantro (chopped)
- 1 cup cheese (shredded or crumbled)
- 1 can beans (black or pinto)
- Cilantro lime vinaigrette (for drizzle)
Instructions
- Place the chicken breasts in the slow cooker and pour salsa over them.
- Cook on low for 4-6 hours or until the chicken is tender.
- Shred the chicken with two forks and mix it back with the salsa.
- In a bowl, serve the chicken mixture over cooked rice.
