Description
A comforting and easy slow cooker chicken noodle soup that layers flavors and brings warmth to any meal.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups water
- 2 cups egg noodles
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a slow cooker, combine the chicken breasts, chicken broth, water, carrots, celery, onion, garlic, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 4 hours.
- About 30 minutes before serving, remove the chicken and shred it. Return the shredded chicken to the slow cooker.
- Add the egg noodles and cook until they are tender, about 30 minutes.
- Serve hot, garnished with fresh parsley.
