Description

A comforting and easy slow cooker chicken noodle soup that layers flavors and brings warmth to any meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a slow cooker, combine the chicken breasts, chicken broth, water, carrots, celery, onion, garlic, thyme, salt, and pepper.
  2. Cover and cook on low for 6-8 hours or on high for 4 hours.
  3. About 30 minutes before serving, remove the chicken and shred it. Return the shredded chicken to the slow cooker.
  4. Add the egg noodles and cook until they are tender, about 30 minutes.
  5. Serve hot, garnished with fresh parsley.
