- 1 lb cubed chicken breast
- 4 sliced carrots
- 3 diced potatoes
- 1 chopped onion

Instructions
- Heat olive oil in a skillet over medium heat. Add the onion and garlic, then sauté until softened, about 3-5 minutes.
- Transfer the onion and garlic to the slow cooker. Add the cubed chicken breast, sliced carrots, diced potatoes, chicken broth, thyme, rosemary, salt, and pepper.
- Stir everything together to ensure an even distribution.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and the vegetables are tender.
