Description

Ingredients

  • 1 lb cubed chicken breast
  • 4 sliced carrots
  • 3 diced potatoes
  • 1 chopped onion
  • 2 minced garlic cloves
  • 4 cups chicken broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium heat. Add the onion and garlic, then sauté until softened, about 3-5 minutes.
  2. Transfer the onion and garlic to the slow cooker. Add the cubed chicken breast, sliced carrots, diced potatoes, chicken broth, thyme, rosemary, salt, and pepper.
  3. Stir everything together to ensure an even distribution.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and the vegetables are tender.
