Ingredients
- 1 lb chicken breast, diced
- 4 cups vegetable broth
- 2 cups mixed vegetables (carrots, peas, green beans)
- 1 cup potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup cream or half and half
- Salt and pepper to taste
- 1 tsp thyme
- 1 tsp rosemary
Instructions
- In a slow cooker, combine the diced chicken, mixed vegetables, potatoes, onion, and garlic.
- Pour in the vegetable broth and season with salt, pepper, thyme, and rosemary.
- Stir to combine.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- About 30 minutes before serving, stir in the cream to thicken the stew.
