Description

Ingredients

  • 1 lb chicken breast, diced
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (carrots, peas, green beans)
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cream or half and half
  • Salt and pepper to taste
  • 1 tsp thyme
  • 1 tsp rosemary


Instructions

  1. In a slow cooker, combine the diced chicken, mixed vegetables, potatoes, onion, and garlic.
  2. Pour in the vegetable broth and season with salt, pepper, thyme, and rosemary.
  3. Stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. About 30 minutes before serving, stir in the cream to thicken the stew.
