Description

A warm and hearty chicken stew made in a slow cooker, perfect for chilly evenings with family.


Ingredients

  • 2 pounds chicken thighs or breasts, cut into chunks
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup green beans, trimmed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste


Instructions

  1. Add chicken, carrots, potatoes, onion, and garlic to the slow cooker.
  2. Pour in chicken broth.
  3. Sprinkle thyme, rosemary, salt, and pepper.
  4. Stir to combine ingredients.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  6. Once cooked, shred chicken into bite-sized pieces and mix into the stew.

Notes

For added depth, consider using bone-in chicken thighs. Experiment with additional seasonings as desired.
