Description
A warm and hearty chicken stew made in a slow cooker, perfect for chilly evenings with family.
Ingredients
- 2 pounds chicken thighs or breasts, cut into chunks
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup green beans, trimmed
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Add chicken, carrots, potatoes, onion, and garlic to the slow cooker.
- Pour in chicken broth.
- Sprinkle thyme, rosemary, salt, and pepper.
- Stir to combine ingredients.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Once cooked, shred chicken into bite-sized pieces and mix into the stew.
Notes
For added depth, consider using bone-in chicken thighs. Experiment with additional seasonings as desired.
