Ingredients

  • 2 lb (907 g). bone-in, skin-on chicken thighs, (4-5 chicken thighs)
  • 1 tsp (5 ml) garlic powder
  • 1 tsp (5 ml) paprika
  • 1/2 tsp (3 ml) onion powder
  • 1/2 tsp (3 ml) salt
  • 1/2 tsp (3 ml) Italian seasoning
  • 1 tbsp (15 ml) olive oil
  • 1/3 cup (80 ml) chicken broth
  • 1/4 cup (60 ml) vegetable oil, diced
  • 3 garlic cloves, minced
  • Fresh parsley for garnish


Instructions

  1. Dry the chicken thighs with a paper towel. In a small bowl, combine the garlic powder, paprika, onion powder, salt, and Italian seasoning. Rub the spice blend thoroughly onto the chicken, ensuring even coverage.
  2. Warm the olive oil in a large skillet over medium-high heat. Place the chicken thighs in the skillet with the skin side facing down and cook for about 4-5 minutes until the skin is nicely browned. Transfer the chicken to your slow cooker with the skin side facing up.
  3. Add the chicken broth to the slow cooker, followed by the minced garlic and diced vegetable oil. Set the slow cooker to the LOW setting and cook for 4.5-5 hours, making sure the internal temperature reaches 165°F before taking it out. Sprinkle with fresh parsley and savor the dish!
