Ingredients
- 2 lbs chicken thighs
- 1 can (14 oz) diced tomatoes
- 2-3 chipotle peppers in adobo sauce
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 1 cup chicken broth
Instructions
- Place chicken thighs in the slow cooker.
- In a blender, combine diced tomatoes, chipotle peppers, garlic, cumin, oregano, salt, and pepper; blend until smooth.
- Pour the sauce over chicken in the slow cooker.
- Add sliced onions and chicken broth.
- Cover and cook on low for 6-8 hours or high for 4 hours.
