Description

A comforting meal of tender chicken, vibrant baby carrots, and fluffy Yukon gold potatoes, all infused with the rich flavors of garlic butter, perfect for busy weeknights.


Ingredients

  • 1 1/2 lbs boneless skinless chicken tenders
  • 1 lb baby carrots
  • 1 1/2 lbs Yukon gold potatoes, cut into wedges
  • 1/2 cup salted butter, melted
  • 1 Tbsp minced garlic
  • Salt and pepper to taste
  • 1 tsp dried thyme leaves
  • 1 tsp dried parsley


Instructions

  1. Place the chicken tenders in the center of your slow cooker.
  2. Arrange the potato wedges on one side and scatter baby carrots on the other.
  3. In a mixing bowl, combine the melted butter, minced garlic, salt, pepper, thyme, and parsley.
  4. Pour this garlic butter mixture evenly over the chicken and vegetables.
  5. Cover the slow cooker and cook on HIGH for 240 minutes or on LOW for 360 to 480 minutes, depending on your schedule.
