Description
A tender and flavorful Greek chicken dish cooked in a slow cooker, perfect for weeknight dinners or special occasions.
Ingredients
- 2 lbs boneless skinless chicken breast or thighs
- 1 onion, thinly sliced
- ¼ cup chicken broth
- 1 lemon, juiced (about 3 tablespoons)
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 ½ teaspoons dried oregano
- 1 ½ teaspoons dried thyme
- 1 teaspoon fine sea salt
- ½ teaspoon black pepper
Instructions
- Place the chicken in the bottom of the slow cooker.
- Layer the thinly sliced onion on top of the chicken.
- Whisk together the chicken broth, lemon juice, minced garlic, olive oil, oregano, thyme, sea salt, and pepper in a small bowl.
- Pour the mixture evenly over the chicken and onions in the slow cooker.
- Put the lid on the slow cooker and cook on LOW for 300-360 minutes or HIGH for 180-240 minutes until the chicken is tender or until the internal temperature reaches 165°F/75°C.
- Shred the chicken with two forks right in the slow cooker to soak up the juices. Serve warm with rice, pasta, pita, or atop a Greek salad!
Notes
For extra flavor, consider marinating the chicken overnight in the mixture. Use fresh herbs when available, or adjust measurements for dried herbs.
