Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 lemon (zested and juiced)
- 2 cloves garlic (minced)
- 1 onion (chopped)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Combine the chicken breasts, rice, chicken broth, lemon juice and zest, garlic, onion, thyme, rosemary, salt, and pepper in the slow cooker.
- Mix well to ensure the chicken and rice are evenly coated.
- Cover and cook on low for 240-360 minutes or until the chicken is cooked through and the rice is tender.
- Shred the chicken with two forks and stir back into the rice.
- Serve warm, garnished with fresh parsley.
