Description

A comforting meal of tender chicken marinated in lemon juice and herbs, served with fluffy rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • Juice and zest of 2 lemons
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup rice
  • 2 cups water
  • Fresh parsley for garnish


Instructions

  1. Combine the chicken broth, lemon juice, lemon zest, oregano, thyme, garlic, salt, and pepper in a slow cooker. Stir to mix well.
  2. Add the chicken breasts into the slow cooker, ensuring they are coated with the broth mixture.
  3. Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. Thirty minutes before serving, prepare the rice. In a saucepan, combine rice and water. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice becomes fluffy.
  5. Serve the chicken over fluffy rice and garnish with fresh parsley.

Notes

Sear the chicken briefly before placing it in the slow cooker for enhanced flavor. You can refrigerate the marinated chicken for up to 24 hours for even more flavor.
