Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 2 juicy lemons (juiced and zested)
- 2 tablespoons olive oil
- 1 teaspoon oregano
- 1 teaspoon thyme
- 3 cloves garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- Juice and zest the lemons.
- In the slow cooker, combine chicken broth, lemon juice, lemon zest, olive oil, oregano, thyme, garlic, salt, and pepper.
- Whisk the mixture to create a sauce.
- Place chicken breasts in the slow cooker and coat with the sauce.
- Cover and cook on low for 6-7 hours.
- If desired, remove the lid in the last hour to thicken the sauce, or mix cornstarch with water and add to the slow cooker.
- Shred the chicken, stir into the sauce, and serve over fluffy rice.
