Description

A comforting slow-cooked dish featuring tender chicken breasts and hearty potatoes in a creamy Parmesan garlic sauce, perfect for busy weeknights.


Ingredients

  • 2 pounds potatoes, cut into 1 ½2 inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ¾ teaspoon ground black pepper
  • ½ teaspoon paprika
  • 2 pounds skinless, boneless chicken breasts
  • 1 cup creamy Parmesan garlic sauce, such as Buffalo Wild Wings® Parmesan Garlic
  • ½ cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley, or to taste (optional)


Instructions

  1. Combine the potatoes, olive oil, ¾ teaspoon kosher salt, ½ teaspoon black pepper, and paprika at the bottom of your slow cooker. Stir gently until thoroughly coated.
  2. Place the chicken pieces on top and sprinkle the remaining salt and pepper over them.
  3. In a separate bowl, whisk together the Parmesan garlic sauce and water or chicken stock until well mixed. Pour this mixture over the chicken and potatoes.
  4. Cook on High for 4 hours or on Low for 6 hours until the chicken is tender and the potatoes are cooked through.
  5. Add mozzarella and optional Parmesan cheese during the last 20 minutes of cooking, cover, and let meld together until bubbly.
  6. Before serving, sprinkle with fresh parsley for garnish.

Notes

For extra flavor, consider marinating the chicken in the Parmesan garlic sauce for a few hours beforehand. If you want a spicy kick, add red pepper flakes to the sauce mix.
