A comforting slow-cooked dish featuring tender chicken breasts and hearty potatoes in a creamy Parmesan garlic sauce, perfect for busy weeknights.
Ingredients
- 2 pounds potatoes, cut into 1 ½ – 2 inch chunks
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ¾ teaspoon ground black pepper
- ½ teaspoon paprika
- 2 pounds skinless, boneless chicken breasts
- 1 cup creamy Parmesan garlic sauce, such as Buffalo Wild Wings® Parmesan Garlic
- ½ cup water or chicken stock
- 2 cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese (optional)
- 1 tablespoon chopped fresh parsley, or to taste (optional)
Instructions
- Combine the potatoes, olive oil, ¾ teaspoon kosher salt, ½ teaspoon black pepper, and paprika at the bottom of your slow cooker. Stir gently until thoroughly coated.
- Place the chicken pieces on top and sprinkle the remaining salt and pepper over them.
- In a separate bowl, whisk together the Parmesan garlic sauce and water or chicken stock until well mixed. Pour this mixture over the chicken and potatoes.
- Cook on High for 4 hours or on Low for 6 hours until the chicken is tender and the potatoes are cooked through.
- Add mozzarella and optional Parmesan cheese during the last 20 minutes of cooking, cover, and let meld together until bubbly.
- Before serving, sprinkle with fresh parsley for garnish.
Notes
For extra flavor, consider marinating the chicken in the Parmesan garlic sauce for a few hours beforehand. If you want a spicy kick, add red pepper flakes to the sauce mix.
