Description

A delightful dish that combines sweet pineapple and savory chicken, perfect for easy family meals.


Ingredients

  • 1 pound chicken breasts or tenders
  • 10 oz frozen pineapple
  • 1/2 red onion, chopped
  • 2 bell peppers, chopped (any color)
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 3/4 cup BBQ sauce (1/2 cup added at beginning + 1/4 cup later)
  • Green onions or cilantro (optional garnish)


Instructions

  1. Cut the chicken, peppers, and onions into bite-sized chunks and add to the slow cooker.
  2. Add the frozen pineapple chunks to the cooker, breaking up any large frozen pieces if needed.
  3. Season everything with salt and pepper and drizzle in 1/2 cup of BBQ sauce.
  4. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is fully cooked.
  5. Drain the juices from the slow cooker, and add another 1/4 cup of BBQ sauce.
  6. Mix gently to distribute the sauce and garnish with green onions or dried cilantro if desired.
