Ingredients
- 1 pound chicken breasts or tenders
- 10 oz frozen pineapple
- 1/2 red onion, chopped
- 2 bell peppers, chopped (any color)
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 3/4 cup BBQ sauce (1/2 cup added at beginning + 1/4 cup later)
- Green onions or cilantro (optional garnish)
Instructions
- Cut the chicken, peppers, and onions into bite-sized chunks and add to the slow cooker.
- Add the frozen pineapple chunks to the cooker, breaking up any large frozen pieces if needed.
- Season everything with salt and pepper and drizzle in 1/2 cup of BBQ sauce.
- Cook on low for 6-7 hours or high for 3-4 hours until the chicken is fully cooked.
- Drain the juices from the slow cooker, and add another 1/4 cup of BBQ sauce.
- Mix gently to distribute the sauce and garnish with green onions or dried cilantro if desired.
