Ingredients

  • 4 teaspoon (20 ml) s dried parsley
  • 2 teaspoon (10 ml) s dried onion flakes
  • 1 1/2 teaspoon (8 ml) s dried dill
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) kosher salt
  • 1 teaspoon (5 ml) dried chives
  • 1/2 teaspoon (3 ml) onion powder
  • 1/4 teaspoon (1 ml) freshly ground black pepper
  • 1/2 cup (120 ml) buttermilk, divided
  • 1 1/2 pounds (680 g) boneless, skinless chicken breasts
  • 6 ounce (170 g) s cream cheese, cubed
  • 2 tablespoon (30 ml) s olive oil
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1/4 teaspoon (1 ml) granulated sugar
  • 3 cup (720 ml) s broccoli slaw (about 6 ounce (170 g) s)
  • 1 medium jalapeño, seeded and minced (optional )
  • 12 slices cooked beef bacon
  • 6 kaiser rolls


Instructions

  1. Combine all the ingredients for the ranch flavoring in a small dish.
  2. Pour 1/4 cup of buttermilk into a slow cooker that holds at least 6 quarts. Add 1 tablespoon of the ranch mixture. Sprinkle an additional tablespoon of the ranch mixture on both sides of the chicken breasts. Place the chicken in the slow cooker, flip to cover in buttermilk, and lay flat. Distribute the cream cheese cubes around the chicken. Cover and set to cook on LOW for 2 to 3 hours or HIGH for 1 to 2 hours. The chicken is cooked when a thermometer reads 165°F at the thickest point.
  3. At the same time, mix the remaining 1/4 cup of buttermilk, olive oil, apple cider vinegar, sugar, and leftover ranch seasoning in a large bowl. Add broccoli slaw and mix well. Chill until needed.
  4. Once cooking is complete, turn off the slow cooker and place the chicken on a cutting board. Use two forks to tear the chicken into pieces. Stir the sauce in the slow cooker until it is smooth. Put the shredded chicken and minced jalapeño, if desired, back in the slow cooker. Mix to coat the chicken with the sauce.
  5. Evenly distribute the chicken mixture onto the kaiser rolls. Place two slices of bacon and a portion of slaw on each sandwich.
