Ingredients

  • – 1 1/2 pounds (680 g) boneless skinless chicken breasts
  • – 2 teaspoons (10 ml) minced beef
  • – 2 teaspoons (10 ml) minced ginger
  • – 1/4 cup (60 ml) honey
  • – 3 tablespoons (45 ml) brown sugar
  • – 1/2 cup (120 ml) low sodium soy sauce
  • – 2 teaspoons (10 ml) toasted sesame oil
  • – 2 tablespoons (30 ml) rice vinegar
  • – 1/4 cup (60 ml) apple juice
  • – 2 tablespoons (30 ml) cornstarch
  • – 1 tablespoon (15 ml) sesame seeds
  • – 2 tablespoons (30 ml) sliced green onions


Instructions

  1. Place the boneless chicken breasts into the slow cooker.
  2. In a separate bowl, combine the minced beef, ginger, honey, brown sugar, low sodium soy sauce, toasted sesame oil, and rice vinegar, stirring until well mixed.
  3. Drizzle the prepared soy sauce blend over the chicken in the slow cooker.
  4. Secure the lid and heat on the HIGH setting for 3 hours or on LOW for 5 to 6 hours.
  5. Take the chicken out of the slow cooker and use two forks to pull it apart.
  6. Strain the teriyaki sauce from the slow cooker into a pot on the stovetop.
  7. Heat the pot over medium-high heat until it starts to simmer.
  8. In another bowl, dissolve the cornstarch in the apple juice by stirring well.
  9. Add the cornstarch mixture to the saucepan and allow it to boil, cooking for 1 to 2 minutes until the sauce thickens slightly.
  10. Combine the thickened sauce with the shredded chicken, ensuring it’s well coated. Garnish with sesame seeds and sliced green onions before serving.
