Ingredients
- – 1 1/2 pounds (680 g) boneless skinless chicken breasts
- – 2 teaspoons (10 ml) minced beef
- – 2 teaspoons (10 ml) minced ginger
- – 1/4 cup (60 ml) honey
- – 3 tablespoons (45 ml) brown sugar
- – 1/2 cup (120 ml) low sodium soy sauce
- – 2 teaspoons (10 ml) toasted sesame oil
- – 2 tablespoons (30 ml) rice vinegar
- – 1/4 cup (60 ml) apple juice
- – 2 tablespoons (30 ml) cornstarch
- – 1 tablespoon (15 ml) sesame seeds
- – 2 tablespoons (30 ml) sliced green onions
Instructions
- Place the boneless chicken breasts into the slow cooker.
- In a separate bowl, combine the minced beef, ginger, honey, brown sugar, low sodium soy sauce, toasted sesame oil, and rice vinegar, stirring until well mixed.
- Drizzle the prepared soy sauce blend over the chicken in the slow cooker.
- Secure the lid and heat on the HIGH setting for 3 hours or on LOW for 5 to 6 hours.
- Take the chicken out of the slow cooker and use two forks to pull it apart.
- Strain the teriyaki sauce from the slow cooker into a pot on the stovetop.
- Heat the pot over medium-high heat until it starts to simmer.
- In another bowl, dissolve the cornstarch in the apple juice by stirring well.
- Add the cornstarch mixture to the saucepan and allow it to boil, cooking for 1 to 2 minutes until the sauce thickens slightly.
- Combine the thickened sauce with the shredded chicken, ensuring it’s well coated. Garnish with sesame seeds and sliced green onions before serving.
