Ingredients
- 4 medium Yukon Gold potatoes (about 900g), quartered
- 4 tablespoons (60 ml) butter
- 1 teaspoon (5 ml) salt
- 1/4 teaspoon (1 ml) pepper
- 1/4 cup milk (60ml)
- 2 scallions, chopped
- 2 tablespoons (30 ml) butter
- 1/2 sweet onion, chopped
- 4 tablespoons (60 ml) flour
- 2 cups chicken broth (480ml)
- 2 cups diced carrots (about 300g)
- 2 cups diced celery (about 250g)
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (3 ml) pepper
- 1 teaspoon (5 ml) sage
- 1/2 cup milk (120ml)
- 2 cups (480 ml) cooked and shredded chicken
Instructions
- If you plan to cook the pot pies right away, heat the oven to 375°F.
- Begin with the potatoes: place them in a saucepan, cover with water, and bring to a boil. Reduce the heat and cook until soft, roughly 15 minutes. Drain and put back into the pot.
- Incorporate 4 tablespoons of butter and 1 teaspoon of salt. Mash using a potato masher, then mix in the pepper and milk. Blend in half of the scallions and set aside.
- In a separate large saucepan, melt 2 tablespoons of butter over medium-high heat. Add the onions and cook, stirring, until they begin to soften, about 3 minutes.
- Mix in the flour, then gradually add the chicken broth, whisking continually. Let it simmer for 5 minutes.
- Incorporate the carrots, celery, 1 teaspoon of salt, and the sage. Allow them to simmer for another 5 minutes.
- Pour in the milk and the cooked chicken, continuing to simmer for an additional 5 minutes.
- Transfer the chicken mixture into either a large casserole dish or individual ones. Spread the mashed potatoes over the top, ensuring they reach the edges of the dish. If cooking later, refrigerate until needed, and let come to room temperature before baking.
- Place the casserole on a baking tray with a rim and bake for 30 minutes. Let it cool slightly, sprinkle with the remaining scallions, and serve!
