Description

Ingredients

  • 1 lb / 500g beef mince(ground beef)
  • 1 onion, grated (brown, white or yellow)
  • 2 small carrots, grated
  • 2 eggs
  • 1/4 cup (60 ml) grated parmesan cheese
  • 1/4 cup (60 ml) tomato ketchup(or tomato sauce)
  • 1 cup (240 ml) panko(or breadcrumbs)
  • 1 tsp (5 ml) garlic powder
  • 1 tsp (5 ml) dried oregano
  • 1 tsp (5 ml) dried thyme
  • 1 tsp (5 ml) salt
  • Pepper
  • 2 large or 3 medium potatoes
  • 1 tbsp (15 ml) vegetable oil (optional )
  • 1/2 – 1 cup (360 ml) milk
  • Tomato ketchup or sauce
  • Parsley, finely chopped (optional )


Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Lightly coat eight sections of a muffin pan with non-stick spray.
  3. Shred the onion and carrot directly into a big mixing bowl.
  4. Include the rest of the meatloaf components and blend thoroughly using your hands.
  5. Take 1/2 cup of the meat mixture and shape it into a rough sphere with your hands. Place it into a muffin tin section, forming a slight dome on top.
  6. Repeat the process with the remaining meat mixture, making about eight portions in total.
  7. Bake them for 20 to 25 minutes until the tops turn golden brown. Take them out of the oven.
  8. Peel and chop the potatoes into cubes. Cook them by steaming or boiling until they’re tender but not overly wet.
  9. Drain the potatoes, then add butter and 1/2 cup of milk. Mash them with a potato masher until they’re smooth, adjusting the consistency with more milk if necessary. Ensure the mash is creamy yet firm enough to stay in shape when placed on the Meatloaf Cupcakes.
  10. Apply a small amount of tomato ketchup to the tops of the Meatloaf Cupcakes.
  11. Add the mashed potatoes on top, either by piping or spooning it on.
  12. Optionally, garnish with a sprinkle of parsley before serving.
