Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon (15 ml) olive oil
  • 1 tablespoon (15 ml) Cajun seasoning
  • 8 ounce (227 g) s linguine pasta (225 grams)
  • 2 tablespoon (30 ml) s unsalted butter
  • 3 cloves garlic, minced
  • 1 cup (240 ml) heavy cream (240 milliliters)
  • 1/2 cup (120 ml) chicken broth (120 milliliters)
  • 1 teaspoon (5 ml) smoked paprika
  • 1/4 teaspoon (1 ml) cayenne pepper
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup (120 ml) grated Parmesan cheese (50 grams)
  • 2 tablespoon (30 ml) s chopped fresh parsley
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced


Instructions

  1. Season the chicken breasts with Cajun seasoning, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken breasts to the skillet and cook for 6-7 minutes per side, until cooked through.
  4. Remove the chicken from the skillet and let it rest on a cutting board.
  5. In the same skillet, add the sliced red bell pepper, green bell pepper, and onion.
  6. Sauté the vegetables for 5 minutes until they are tender.
  7. Remove the vegetables from the skillet and set aside.
  8. Cook the linguine pasta according to package instructions, then drain and set aside.
  9. In the same skillet, melt the butter over medium heat.
  10. Add the minced garlic and sauté for 1 minute until fragrant.
  11. Stir in the heavy cream and chicken broth, mixing well.
  12. Add smoked paprika, cayenne pepper, salt, and black pepper to the sauce.
  13. Let the sauce simmer for 5 minutes until it thickens slightly.
  14. Stir in the grated Parmesan cheese until melted and smooth.
  15. Slice the cooked chicken breasts into strips.
  16. Add the cooked linguine, chicken strips, and sautéed vegetables to the sauce.
  17. Toss everything together in the skillet until well combined.
  18. Cook for 2 minutes to heat through.
  19. Garnish with chopped fresh parsley before serving.
