Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon (15 ml) olive oil
- 1 tablespoon (15 ml) Cajun seasoning
- 8 ounce (227 g) s linguine pasta (225 grams)
- 2 tablespoon (30 ml) s unsalted butter
- 3 cloves garlic, minced
- 1 cup (240 ml) heavy cream (240 milliliters)
- 1/2 cup (120 ml) chicken broth (120 milliliters)
- 1 teaspoon (5 ml) smoked paprika
- 1/4 teaspoon (1 ml) cayenne pepper
- Salt, to taste
- Black pepper, to taste
- 1/2 cup (120 ml) grated Parmesan cheese (50 grams)
- 2 tablespoon (30 ml) s chopped fresh parsley
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
Instructions
- Season the chicken breasts with Cajun seasoning, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 6-7 minutes per side, until cooked through.
- Remove the chicken from the skillet and let it rest on a cutting board.
- In the same skillet, add the sliced red bell pepper, green bell pepper, and onion.
- Sauté the vegetables for 5 minutes until they are tender.
- Remove the vegetables from the skillet and set aside.
- Cook the linguine pasta according to package instructions, then drain and set aside.
- In the same skillet, melt the butter over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Stir in the heavy cream and chicken broth, mixing well.
- Add smoked paprika, cayenne pepper, salt, and black pepper to the sauce.
- Let the sauce simmer for 5 minutes until it thickens slightly.
- Stir in the grated Parmesan cheese until melted and smooth.
- Slice the cooked chicken breasts into strips.
- Add the cooked linguine, chicken strips, and sautéed vegetables to the sauce.
- Toss everything together in the skillet until well combined.
- Cook for 2 minutes to heat through.
- Garnish with chopped fresh parsley before serving.
