Ingredients
- 1 lb chicken breast
- 1 can black beans, rinsed and drained
- 1 cup corn, cooked
- 1 avocado, diced
- 1/2 cup creamy chipotle sauce
- Salt and pepper to taste
- Rice or quinoa for serving
- Lime wedges for garnish (optional)
Instructions
- Cook the chicken breast in a skillet over medium heat until fully cooked, about 6-7 minutes per side. Season with salt and pepper.
- In a bowl, layer cooked rice or quinoa at the bottom.
- Slice the cooked chicken and add it on top of the rice/quinoa.
- Layer black beans, corn, and diced avocado on top of the chicken.
- Drizzle with creamy chipotle sauce.
- Serve with lime wedges on the side.
