Description

A flavorful smoky chicken bowl featuring tender chicken breast, black beans, corn, avocado, and creamy chipotle sauce, perfect for a satisfying meal.


Ingredients

  • 1 lb chicken breast
  • 1 can black beans, rinsed and drained
  • 1 cup corn, cooked
  • 1 avocado, diced
  • 1/2 cup creamy chipotle sauce
  • Salt and pepper to taste
  • Rice or quinoa for serving
  • Lime wedges for garnish (optional)


Instructions

  1. Cook the chicken breast in a skillet over medium heat until fully cooked, about 6-7 minutes per side. Season with salt and pepper.
  2. In a bowl, layer cooked rice or quinoa at the bottom.
  3. Slice the cooked chicken and add it on top of the rice/quinoa.
  4. Layer black beans, corn, and diced avocado on top of the chicken.
  5. Drizzle with creamy chipotle sauce.
  6. Serve with lime wedges on the side.

Notes

For a spicier kick, add more of the creamy chipotle sauce. Consider using grilled shrimp or tofu for a different protein option.
