Description

A comforting dish of tender chicken smothered in a creamy, cheesy sauce served over fluffy rice, perfect for family gatherings and cozy dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, for garnish


Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear chicken until golden brown on both sides. Remove chicken from skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Whisk in flour to form a roux.
  4. Gradually add milk and chicken broth, stirring continuously to maintain a smooth consistency.
  5. Add garlic powder and thyme to the sauce, then stir in cheddar and Parmesan until melted.
  6. While the sauce thickens, bring chicken broth to a boil in a separate saucepan and cook the rice according to package instructions.
  7. Return the chicken to the skillet, coating it with the sauce, and simmer together until chicken is cooked through.
  8. Fluff the rice with a fork and serve chicken over rice, drizzling with sauce and garnishing with parsley.

Notes

Cover the chicken with foil to keep warm while making the sauce. Experiment with different cheeses or add frozen peas to the rice for added flavor.
