Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 2 teaspoons smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper and place them in the skillet. Cook until they brown, about 5-7 minutes on each side. Remove the chicken and set it aside.
  3. In the same skillet, add the chopped onion, minced garlic, and sliced bell pepper. Cook until they soften.
  4. Stir in the smoked paprika, chicken broth, and diced tomatoes. Bring this mixture to a simmer.
  5. Return the chicken thighs to the skillet, cover, and let everything simmer for 25-30 minutes until the chicken cooks through.
  6. Serve hot, garnished with fresh parsley for that pop of color and flavor.

Notes

For a thicker sauce, let it simmer uncovered for a few more minutes to allow excess liquid to evaporate.
