Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup chicken broth
- 1 cup diced tomatoes
- 2 teaspoons smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken thighs with salt and pepper and place them in the skillet. Cook until they brown, about 5-7 minutes on each side. Remove the chicken and set it aside.
- In the same skillet, add the chopped onion, minced garlic, and sliced bell pepper. Cook until they soften.
- Stir in the smoked paprika, chicken broth, and diced tomatoes. Bring this mixture to a simmer.
- Return the chicken thighs to the skillet, cover, and let everything simmer for 25-30 minutes until the chicken cooks through.
- Serve hot, garnished with fresh parsley for that pop of color and flavor.
Notes
For a thicker sauce, let it simmer uncovered for a few more minutes to allow excess liquid to evaporate.
