Description

Delicious sour cream chicken enchiladas, combining tender chicken, creamy sour cream, and zesty enchilada sauce for a comforting family meal.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) cream of chicken soup
  • 8 flour tortillas
  • 1/2 cup diced onions
  • 1 can (10 oz) green enchilada sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine the shredded chicken, sour cream, 1/2 cup of shredded cheese, cream of chicken soup, diced onions, garlic powder, cumin, salt, and pepper.
  3. Place a generous amount of the chicken mixture into each flour tortilla and roll them up.
  4. Place the rolled tortillas seam-side down in the greased baking dish.
  5. Pour the green enchilada sauce over the top and sprinkle with the remaining cheese.
  6. Bake for 25-30 minutes until heated through and the cheese is bubbly.
