A comforting Southern Chicken Spaghetti Casserole that combines creamy flavors, tender chicken, and cheesy goodness over a bed of spaghetti, perfect for family dinners.
Ingredients
- 2 cups cooked spaghetti
- 2 cups cooked chicken, shredded
- 1 can cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup chicken broth
- 1 small onion, chopped
- 1 bell pepper, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion and bell pepper until they soften.
- In a large bowl, mix the cooked spaghetti, shredded chicken, cream of mushroom soup, sour cream, chicken broth, and half of the shredded cheddar cheese. Season with salt and pepper to taste.
- Add the sautéed vegetables to the mixture and combine everything thoroughly.
- Transfer the mixture to a greased baking dish, smoothing it into an even layer.
- Top with the remaining cheddar cheese and grated Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes or until the top is bubbly and golden.
- Let cool for a few minutes before serving warm.
