Description

Delightful and flavorful Southwest Chicken Egg Rolls packed with shredded chicken, corn, black beans, and spices, perfect for gatherings.


Ingredients

  • 2 cups cooked chicken (shredded or chopped)
  • 1 cup corn (drained and rinsed)
  • 1 cup black beans (drained and rinsed)
  • 1 cup spinach (chopped)
  • 1 cup diced red bell pepper
  • 1/4 cup diced jalapeño (de-seeded)
  • 1/2 TBS cumin
  • 1/2 TBS chili powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 cups Monterey jack cheese
  • 1 package egg roll wrappers (20 egg roll wrappers)


Instructions

  1. In a large bowl, combine the shredded chicken, drained corn, black beans, chopped spinach, diced red bell pepper, and jalapeño.
  2. Sprinkle the cumin, chili powder, salt, and black pepper over the mixture and stir thoroughly.
  3. Gently fold in the shredded Monterey Jack cheese, mixing it well.
  4. Lay an egg roll wrapper on a clean surface with one point facing you.
  5. Place 2-3 tablespoons of the filling in the center of the wrapper.
  6. Start rolling the egg roll, folding the bottom corner over the filling, tucking tightly, then folding in the two side corners.
  7. Continue to roll it up, sealing the edges with water.
  8. Place the assembled egg rolls on a baking sheet and freeze until ready to fry or bake.
