Delightful and flavorful Southwest Chicken Egg Rolls packed with shredded chicken, corn, black beans, and spices, perfect for gatherings.
Ingredients
- 2 cups cooked chicken (shredded or chopped)
- 1 cup corn (drained and rinsed)
- 1 cup black beans (drained and rinsed)
- 1 cup spinach (chopped)
- 1 cup diced red bell pepper
- 1/4 cup diced jalapeño (de-seeded)
- 1/2 TBS cumin
- 1/2 TBS chili powder
- 1 tsp salt
- 1/4 tsp black pepper
- 2 cups Monterey jack cheese
- 1 package egg roll wrappers (20 egg roll wrappers)
Instructions
- In a large bowl, combine the shredded chicken, drained corn, black beans, chopped spinach, diced red bell pepper, and jalapeño.
- Sprinkle the cumin, chili powder, salt, and black pepper over the mixture and stir thoroughly.
- Gently fold in the shredded Monterey Jack cheese, mixing it well.
- Lay an egg roll wrapper on a clean surface with one point facing you.
- Place 2-3 tablespoons of the filling in the center of the wrapper.
- Start rolling the egg roll, folding the bottom corner over the filling, tucking tightly, then folding in the two side corners.
- Continue to roll it up, sealing the edges with water.
- Place the assembled egg rolls on a baking sheet and freeze until ready to fry or bake.
